- Cortamos las berenjenas por la mitad y con un cuchillo hacemos unos corte sin llegar a la cáscara esto es para facilitar al freírlas, las salamos y en una sartén con abundante aceite las freímos por los dos lados, y las ponemos en un colador para que escurra el exceso de aceite, luego sacamos la pulpa y la troceamos en trocitos pequeños (y reservamos) Picamos la cebolla en cuadraditos pequeños igual que los tomates (previamente pelados) y le quitamos la piel a las salchichas.



- En una sartén con 4 cucharadas de aceite pochamos la cebolla, cuando está pochada añadimos las salchichas sin piel,(y bien desmenuzadas), los tomates triturados y la pulpa de las berenjenas, rehogamos unos minutos y añadimos el vino y un puñado de queso rallado y dejamos cocer 5 minutos sazonamos y ya fuera del fuego, añadimos el huevo batido.
