- Cuando la picada esta a nuestro gusto de cocción, separamos toda la picada haciendo un círculo en el centro de la base de la cacerola, (como si hiciéramos un volcán) dejando en el fondo solo el aceite de la cocción, echamos la harina y la dejamos freír unos minutos, cuando esté dorada, agregamos la leche (previamente calentada), y vamos haciendo una bechamel, agregaremos la nuez moscada, e iremos dando vueltas a la bechamel a la vez que incorporamos todas la picada que tenemos a los extremos.
- Cuando la pasta ya esta echa, la sacamos del fuego y vamos rellenando las berenjenas que teníamos reservadas en la bandeja del horno, las espolvoreamos con queso rallado y las llevamos al horno a gratinar.
