- 125 grs jalapeños verdes
- 400 grs queso rallado

- Lo primero que tendremos que hacer es poner a cocer en abundante agua y sal las patatas, las cuales estarán así unos 20 minutos.
- Mientras tanto filetearemos las pechugas de pollo y posteriormente las cortaremos en tiras finas, una vez listas las saltearemos en un sartén con un chorro de aceite de oliva hasta que estén bien doradas, antes de que estén totalmente cocinadas añadiremos la mitad de la salsa verde mexicana, cocinar un par de minutos y reservar.
- Ahora vamos a preparar la salsa de las enchiladas para ello vamos a introducir en un vaso batidor la otra mitad de la salsa verde, los jalapeños con la mitad de su caldo y el queso, trituramos bien hasta formar una salsa espesa de color verde, si os queda demasiado espesa puedes agregar mas caldo de jalapeños o agua de la cocción de la patata.
- Llegados a este punto las patatas ya estarán listas así que las escurrimos y dejamos enfriar un poco para pelarlas y machacarlas hasta formar un puré de patata al que vamos a salpimentar ligeramente.
- Con todo listo vamos a ir enrollando las enchiladas, sobre cada tortilla iremos poniendo puré de patata y las tiras de pollo, enrollarlas (mejor ver video) y disponerlas en una bandeja de horno. Cubrir con la salsa espesa verde y gratinarlas en el horno hasta que doren.
