- 2 rebanadas pan de cereales
- 1 filete pechuga de pollo
- 1/2 aguacate
- 1/2 huevo cocido
- 1/2 pepino
- jalapeños
- Hojas acelga roja tierna
- Hummus
- Pesto
- ---- Para el rebozado de las pechugas:
- Pan rallado (biscotes integrales triturados en su defecto)
- copos avena
- Especias: pimentón picante, ras al honout, curry, cúrcuma, pimienta..

- Yo no tenía pan rallado, así que puse unos biscotes integrales con los copos de avena en el procesador y lo trituré muy bien, hasta conseguir un rebozado bien en polvo.

- Le añadimos las especias que más nos gusten para darle un toquecito a las pechugas. Y las pasamos por este rebozado. Sobre un papel de horno ponemos las pechugas y metemos al horno a unos 170º durante al menos 15 minutos.

- Mientras cortamos el pepino a finas láminas, el aguacate igual y el huevo, que ya teníamos previamente cocido.

- Lavamos las acelgas rojas bien y las ponemos sobre un papel absorbente. A mi este tipo de acelga me gusta mucho porque es muy ligera y tierna, para ensalada va genial y por eso en este sándwich la he utilizado en sustitución de la lechuga tradicional.

- Hacemos el pesto. Para ello ponemos en la procesadora las hojas de albahaca bien lavadas, los anacardos, el queso, el aceite de oliva, el medio ajo y un poquito de sal. Trituramos bien y reservamos hasta que esté listo y rico de sabor.

- Cuando ya estén doraditas las pechugas estarán listas. A una de ellas le puse semillas (chía, sésamo y lino) junto al rebozado.

- Empezamos a montar el sándwich. Para ello tostamos un poquito el pan y a una de las caras le añadimos un poquito de hummus.

- Ahora añadimos las hojas de acelga, el huevo cocido, las lonchas de pepino, el aguacate, unos jalapeños troceados, el pollo rebozado y pesto al gusto.

- Y ya tendremos listo nuestro súper sándwich green!! Así de rico queda por dentro :)
