- 2 blancos
- 1 tira salchicha fresca

- Pan rallado
- 1/2 vaso vino blanco
- 3 dientes ajos
- 1 chorro aceite de oliva
- Harina
- Para la salsa :
- 1/2 kilo pavo a trocitos
- 1 cebolla
- 1 tomate maduro
- 1 hoja laurel
- 1 vaso vino blanco
- 1 bote champiñones
- Guisantes
- Unas zanahorias baby congeladas
- 15 almendras, piñones, dos dientes de ajos, perejil, pimienta, sal, aceite y tomillo

- Picamos las pechugas, magra, longaniza, salchicha, los blancos y el chorizo.

- En un bol ponemos la carne y le añadimos, los piñones, los ajos muy picaditos, el perejil picado, el medio vaso de vino, los dos huevos, pimienta, sal y el pan rallado.

- Lo mezclamos todo muy bien hasta conseguir una pasta que se pueda trabajar bien, añadiendo el pan rallado hasta conseguirla.

- Vamos haciendo las pelotas.

- Una vez todas echas las pasamos por harina.

- Freímos en abundante aceite y reservamos.

- Ponemos la olla pronto al fuego con un poco de aceite de oliva. Freímos las almendras, los ajos, piñones, laurel.

- Sacamos y reservamos

- Añadimos los trozos de pavo y sofreímos.

- Raspamos la cebolla y el tomate y pasado cinco minutos se lo echamos a la carne y seguimos sofriendo.

- Añadimos el vino y la hoja de laurel, un poco de sal y pimienta. Dejamos cocer cinco minutos.

- Añadimos medio litro de agua.

- Tapamos la olla y cuando la válvula pite, la dejamos media hora.

- Mientras tantos hacemos una picada, con los ajos, almendras, piñones y perejil.

- Pasamos lo de la olla a una cazuela o sartén grande.

- Le añadimos el bote de champiñones, un vaso de guisantes y media bolsa de zanahorias congeladas baby.

- Dejamos cocer diez minutos y le echamos la picada. Añadimos otro vaso de agua y las albóndigas.Ponemos un poco de tomillo, probamos de sal y dejamos hacer otros diez minutos. Y listo.

- Acompañamos con patatas fritas.
